A jelly-like substance called agar-2 (or agar), is a complex polysaccharide (phycocolloid), is extracted in water from certain sps. of red algae belonging to Gelidium, Gracillaria and Gigartima and some other genera, this is produced and stored in their cell walls along cellulose.
